BEFORE CLASS PREP:
30 minutes before class, precook WHOLE potatoes (boil until fork tender, approximately 30 min in the pot): LEAVE THE SKIN ON SO YOUR POTATOES DON’T GET WATER LOGGED
If you are planning to prepare a homemade stock: Simply add some vegetables like onion, carrot & celery to a pot with about a tablespoon of olive oil. Simmer & add chicken scrap if desired. Once browned cover with water bring to a low boil and reduce to a simmer. Cook at a low simmer for an hour or two. Strain off the liquid, no need to season. Can be made any time between now and class.
